I grew up eating my mom's delicious, Bosnian stuffed bell peppers and to this day think she has the best recipe hands down! But, when I have those days where I prefer a plant based meal, I make these vegan stuffed peppers instead. Add a little dairy free cheese on top and voila! ;)

Ingredients:
5-6 bell peppers, any color
1 small eggplant, peeled and cubed
1 yellow squash, cubed
1 8oz package mushrooms, cubed
2 tbsp olive oil
1 medium sized yellow onion, diced
2 large garlic cloves, minced
1 cup organic, sugar free tomato sauce
1 cup cooked rice (I used jasmine thai)
1 tsp salt (more to taste)
¼ tsp pepper
1 tsp paprika
½ tsp garlic powder
¼ tsp cayenne pepper (optional)
½ cup water
