Chicken fried rice is one of those meals that when I start, I can't stop eating. I always over eat because it's such a comfort food! This fried rice recipe is quick and easy to make, just use whatever veggies you have on hand and watch the wok magic happen!

INGREDIENTS:
1 tbsp vegetable oil
3 scrambled eggs
1 tbsp sesame oil
I large shallot or small onion 3-4 cloves of garlic
1 tsp grated ginger
2 chicken breasts
1 cup carrots/peas (don’t be afraid to use frozen, just thaw them out first)
1 handful of bean sprouts (optional)
Handful of green beans (optional)
3 cups white rice (not hot, best to make ahead of time)
4-5 green onions
¼ tsp pepper
½ tsp salt
Sauce:
2 tbsp light soy sauce
2 tsp oyster sauce
